BANANA BREAD WE CAN'T LIVE WITHOUT

I wanted to include this recipe first because it is a staple in our home. Also- I hate bananas and I still love to eat this! I make it weekly and we all love it for so many reasons. It is gluten-free, dairy free and low carb (and the kids don't know!) I got this recipe from my friend Amber who runs The Girl Cooks Clean blog. I use her Instagram weekly for meals!

 

Banana Bread Recipe:

2 large bananas, mashed

3 eggs

1 Tbs vanilla extract

1/4 c of honey

1/4 c coconut oil (melted)

1 c almond meal

1 c almond flour

1/2 tsp sea salt

1 tsp baking soda

**my additions**

1/4 c dairy-free chocolate chips

1/4 c unsalted walnuts

 

Preheat oven to 350 / Serves 1 loaf

 

In a large bowl, mix bananas, eggs, vanilla extract, honey and coconut oil.

With a spatula, stir in almond flour, almond meal, baking soda and salt.

Scoop batter into a greased loaf pan (or use parchment paper for easy clean up!)

Bake for 40-50 minutes and test with a toothpick!

Allow to cool before removing from pan.

 

Now put it on a pretty dish and impress your visitors!
